Ingredients:

1 cup macaroni pasta

1 tsp salt (for boiling)

1 tsp olive oil (for boiling)

1 tbsp olive oil (for sauce)

4–5 garlic cloves (finely chopped)
-
½ cup tomato purée
-
1 tbsp pizza-pasta sauce
-
1 tsp oregano
-
1 tsp chili flakes
-
Salt to taste

1 tbsp tomato ketchup
-
2 tbsp grated cheese (mozzarella or processed)
-
1 tbsp butter
-
1 small handful red carrot microgreens (plus extra for garnish)
Method:

Boil Macaroni
-
Boil 3 cups of water with 1 tsp salt and 1 tsp olive oil.

Add macaroni and cook till al dente.

Drain and keep aside.

Prepare Sauce
-
In a pan, heat 1 tbsp olive oil.

Sauté chopped garlic until aromatic.
-
Add tomato purée and cook for 3–4 minutes.

Add pizza-pasta sauce, oregano, chili flakes, tomato ketchup, salt, and mix well.

Stir in the cheese and let it melt into the sauce.

Mix Pasta & Microgreens

Add boiled macaroni to the sauce.

Add butter and toss well.

Mix in a small handful of red carrot microgreens.
-
Garnish & Serve
-
Plate the pasta and garnish generously with red carrot microgreens and Jalapenos.

Serve hot!
