🍝 Red Carrot Microgreens Macaroni

A comforting, flavour-packed pasta dish with a nutritious twist of microgreens 🌱

Ingredients:

  • 1 cup macaroni pasta
  • 1 tsp salt (for boiling)
  • 1 tsp olive oil (for boiling)
  • 1 tbsp olive oil (for sauce)
  • 4–5 garlic cloves (finely chopped)
  • ½ cup tomato purée
  • 1 tbsp pizza-pasta sauce
  • 1 tsp oregano
  • 1 tsp chili flakes
  • Salt to taste
  • 1 tbsp tomato ketchup
  • 2 tbsp grated cheese (mozzarella or processed)
  • 1 tbsp butter
  • 1 small handful red carrot microgreens (plus extra for garnish)

Method:

  1. Boil Macaroni
    • Boil 3 cups of water with 1 tsp salt and 1 tsp olive oil.
    • Add macaroni and cook till al dente.
    • Drain and keep aside.
  2. Prepare Sauce
    • In a pan, heat 1 tbsp olive oil.
    • Sauté chopped garlic until aromatic.
    • Add tomato purée and cook for 3–4 minutes.
    • Add pizza-pasta sauce, oregano, chili flakes, tomato ketchup, salt, and mix well.
    • Stir in the cheese and let it melt into the sauce.
  3. Mix Pasta & Microgreens
    • Add boiled macaroni to the sauce.
    • Add butter and toss well.
    • Mix in a small handful of red carrot microgreens.
  4. Garnish & Serve
    • Plate the pasta and garnish generously with red carrot microgreens and Jalapenos.
    • Serve hot!
