Microgreens Quinoa Curd Rice

đź’š Beat the summer blues with a bowl full of probiotics and peppery greens!

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 cup China Rose Radish microgreens 
  • 1/2 cup onions
  • 2 cup curd
  • 1/2 tsp mustard seeds
  • 1/2 tsp urad dal
  • 1/2 tsp chanadal
  • 1/2 tsp cumin seeds
  • pinch of hing
  • 2 nos Red chilli
  • curry leaves and coriander leaves 

Instructions:

  • Rinse and cook quinoa in water until soft. Set aside and let it cool completely.
  • In a bowl, mix fresh curd with finely chopped onions.
  • Season with a pinch of salt and ginger powder for a soothing flavor boost.
  • In a hot pan, prepare the tempering with ghee, mustard seeds, urad dal, chana dal, cumin seeds, a pinch of hing, dried red chilies (2), and fresh curry leaves. Let them sizzle!
  • Pour the tempering over the curd quinoa mixture and mix well.
  • Finish with a generous garnish of coriander leaves and China Rose Radish microgreens from Hita Greens for that peppery zing and nutrition punch.
