Microgreens and Quinoa Salad

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 cup mixed microgreens (Pea Shoots, Kohlrabi Red and Sunflower Microgreens
  • 1/2 cup red beans
  • 1 red pepper
  • 1 avocado
  • 1/4 red onion, finely chopped
  • 1/2 cup chickpeas
  • 1/4 cup toasted almonds or pine nuts (optional)
  • Olive oil, lemon juice, honey (or maple syrup), garlic, salt, and black pepper for the dressing.

Instructions:

  • Rinse and cook quinoa in water, then let it cool.
  • Whisk together olive oil, lemon juice, honey (or maple syrup), garlic, salt, and pepper for the dressing.
  • In a large bowl, combine quinoa, microgreens, cherry tomatoes, cucumber, and red onion.
  • Add dressing and toss to coat.
  • Garnish with crumbled feta and toasted nuts.
  • Serve and enjoy your Microgreens and Quinoa Salad!
